Cutting up chickens (Monday/Tuesday).
Monday and Tuesday were pretty fun. Monday I got to meet the two other seniors that were doing their project at ICASI, Raymon and Ihi (I think thats how you spell their names). They are students at Andrews Osborn Academy and are originally from China. They are very nice and fun to hang around with. Tuesday, we got to make bread and sit in on the knife skills class, except this time they were learning how to cut up a chicken. That was a sight to see. We walked in halfway through the class, so we missed some important talking points, but we were able to see two different ways to cut up a chicken and remove the bones, which looked pretty complicated. The first method was to separate everything from the rib cage, and then cut along the back bone. After that, cuts were made into the leg to take out the bones. If you did it right, all you were left with was a boneless chicken carcass. The other way we saw was to make to cuts into the rib cage, which produced more meat but was a little more gruesome. I didn't actually do any cutting, I just watched Chef Tim and the class. Other than that we did some boring computer work. I have pictures to upload (none of cutting chicken), I just need to figure out how to get them from my phone onto my computer. If any one knows how to do that, please tell me.
