Monday was a pretty fun day, I got to help out in the prep kitchen. I basically helped them out with whatever they needed. I got to cut up some chicken, peppers, onion, and anything else they needed. I helped them prepare all the stuff that they needed for the restaurant, Sapore, which is across the street from ICASI.
Tuesday, I helped Chef Tim build sugar boxes, which are used to melt sugar and then build sculptures out of melted sugar. Working with melted sugar is very similar to working with glass, in fact its almost the same thing. To build a sugar box, we measured out and then drilled holes into the sides of 3 pieces of plexi-glass, then connected them with hinges. After that, we put two wood boards on top of the box and fed a lamp wire through in between them, and then put a big paper clip on the wire so it wouldn't fall down anymore. We then wrapped the top in tin foil and put duct tape over the sides so no heat could escape. I didn't get to see the students actually make the sugar sculptures but I talked to them the next day and they told me it was a lot of fun.
Wednesday, Chef Stefanie needed us to test out certain recipes that she got to see if they needed to be corrected or not. I got to test out the recipe for a peach upside down, which was very delicious. I started out by cutting up 3 peaches, then laying the pieces in the bottom of a pan. Next, I melted some butter, then put brown sugar and pumpkin spice in it and mixed it all up, then put it on top of the peaches. That would make up the top crust. Then came the cake batter, which I don't exactly remember what the recipe was, but it did need more butter, and overall it turned out that it needed more liquid because it was too thick. Overall, though, it was a very fun day.
Thursday was one of the best days of my project. I got to participate in a culinary class that was making pizza. I made the dough from scratch, then spent a while kneading the dough until it was perfect for pizza. The hardest part had to be trying to get it into a circle, but mine came out as an oval. On my pizza, I put some hand made red pepper sauce, pepperoni, sausage, and green peppers, and onions. Everyone else in the class made their own favorite kind, and we ended up with about 11 different pizzas.
Tomorrow I get to help Chef Tim set up for his 8 hour BBQ boot camp on Saturday. All in all, its been a great final week. Next week I will be preparing for my final meal, which I still need people to come to. Its for a good cause, any money donated will be going to the Cleveland Food Bank.
