Thursday 5/3/2012
Thursday was very fun because I got to spend the whole day in a culinary class making pasta from scratch. It was a class of 4 students and the instructor, Chef Brad. The first step was to make the sauce. So, I learned how to cut an onion the right way, and then put the bits of onion in pan with some olive oil. After about 5 minutes, I added black olives and a lot of tomato sauce, stirred it, and then let it sit. The next step was making the dough. To make it, we poured a cup of flower, and egg, and some white wine into a blender. Then, I took the dough out of the blender and placed it on my table, which I first covered in flour so the dough wouldn't stick. After sprinkling some flour on the dough, I folded it in half then smushed it against the table, and repeated this process until Chef Brad told me to stop. I then wrapped the dough in plastic wrap and let it sit. A few minutes went by, I unwrapped the dough and put it through an old fashioned, crank operated pasta maker, which flattened the dough, and then put it through a pasta cutter attached to the machine, which cut the thin dough into noodles. I then put a little flour on the noodles, put them into a pot of boiling water, reheated the sauce, put the noodles and sauce into a bowl, mixed the two, put a little garnish on top, and that was my lunch. I also made garlic bread, which was delicious.
