My first three days at culinary school have been pretty fun. Everyone is nice and energetic and everyone loves working there. Monday morning I came in for my first day and helped the school recover from the big culinary event at the I-X Center this past weekend. After the initial unpacking, I just floated around from place to place helping in any way I could; basically a crash-course on how everything worked. I finished the day off sitting in on a knife-skills class taught by Chef Tim, a funny guy with a wealth of culinary knowledge. The class taught students fun and creative ways to cut fruit and vegetables. While I wasn't allowed to participate, I was able to meet the students in the class, all of whom were very friendly. The second day was spent helping set up for ICASI's open house, which involved a lot of table moving and chair stacking.
Today(Wednesday) was the day of ICASI's open house, and I got to do some fun stuff to help them prepare. I spent the morning working with Chef Stefanie making cookies. I rolled out the dough, cut out the cookies, and melted a huge chunk of chocolate into chocolate sauce, which we used to decorate the cookies. It was surprising how hard it was to melt chocolate. You have to put the chunk of un-melted chocolate into a bowl that sits above a pot filled with water. You heat the pot which causes the water to evaporate, and the heat from the steam heats the bowl which melts the chocolate. You then have to constantly stir the melting chocolate around the bowl, scraping the chocolate off the sides of the bowl so it doesn't burn and stick to the sides. Overall it has been a fun three days and I am looking forward to whatever is next.
Corey, you're project sounds fantastic, and I promise I'm not saying that because I'm super hungry! I think culinary school will make for a fantastic project and I should probably take notes because I'm sure there will be more helpful tips in future posts. Though I'm an expert in the preparation of frozen vegetables and cold cereal, your chocolate melting experience is something new. I think it would be really cool if you could take pictures (I'm note sure if you're allowed...), I'm curious as to how one creatively cuts fruits and vegetables. Keep up the good work and I'll happily give you my DC address if you'd like to send down any cookies!
